APPEARANCE: deep ruby-red with slight russet tinge
AROMAS: concentration of ripe, untamed hedgerow and forest fruits – damson and plum aromas to the fore – with a touch of menthol also noticeable
TASTE: palate is medium to full bodied and smooth; tannins are soft and savoury, with ripe fig and herbaceous brambly fruit flavours. Fresh acidity; punchy and quite potent!
FOOD PAIRING: recommended as a food wine, best enjoyed with a juicy steak, roasts, BBQ fare, stews, pasta dishes or strongly flavoured cheeses
OVERALL: Made by Frenchman Michel Fabre – who owns his own vineyard in the Minervois – this is a distinctive, powerful and complex red that continues to develop with age
