AROMAS: concentration of ripe, untamed hedgerow and forest fruits, with damson and plum aromas to the fore; a touch of menthol too
TASTE: tannins are ripe, savoury and soft; palate is medium to full bodied and smooth, with ripe fig and herbaceous brambly fruits. Fresh acidity; punchy and quite potent!
FOOD PAIRING: recommended as a food wine, best enjoyed with a juicy steak, roasts, stews, pasta dishes or strongly flavoured cheese
OVERALL: Made by Frenchman Michel Fabre – who owns his own vineyard in the Minervois – this is a distinctive, powerful and complex red that continues to develop with age
