This sparkling wine from Brazil is a classic blend of 50% Chardonnay and 50% Pinot Noir. Light yellow presenting a green reflection with fine and resistant bubbles. The perlage is fine, but intense and long lasting bubbles, leaving a brief and interesting crown. Aromas complex and pleasant range of fruit and aging bouquets (yeast maturation). The taste is balanced acidity, fine body, leaving a pleasant taste in the mouth.

Manual harvest (exceptional vintages from the vineyard in São Gabriel only) into 20kg crates. Mechanical destemming and light pressing, releasing the juice and leaving grapes whole. Pneumatic pressing to extract up to 50% of must (0.5 l of must from 1 kg of grapes). The remainder is used in the production of other Brazilian white wines. Cold decanting of must.  Temperature-controlled first fermentation (base wine) in stainless steel tanks.  Decanting of base wine at -3ºC for precipitation of tartaric salts. For production of brut sparkling wine: Base wine is bottled and a small amount of sugar and yeast are added to cause fermentation, creating foam and pressure. Bottle fermentation (2nd fermentation) in cellars at 10ºC for approximately 60 days (pressure inside bottle: 6 kg/cm2). Bottles are stored horizontally in the cellar to age for approximately one year. Remuage: bottles are placed in special pyramidal racks and manually rotated (1/4 turn) daily for about 30 days, so that the residue collects in the bottlenecks. Disgorgement:  Bottlenecks are frozen in a special machine, caps are removed and the pressure in the bottle causes the sediment to pop out. Dosage, cork and wire fasteners are added. Bottles rest for 15 days, are then labeled, and ready to enter the market.
